Ingredients
1 cup sugar 2 cups coconut milk (you can replace with other plant milk) 1 tsp vanilla extract 2 tbsp cornstarch or potato flour fresh or frozen/thawed berries toasted walnuts Directions .Combine the sugar, 1 cup of milk and the vanilla extract in a pot. Cook stirring occasionally until the sugar dissolves. .In a separate bowl whisk together the cornstarch and the rest of the milk. Add this to the pot with the dissolved sugar. .Cook, stirring vigorously, for another few minutes until the cream starts to thicken. Transfer into serving bowls and let it cool down (it’s even better if you chill it in the fridge, if you have time). Just before serving top it with fresh or thawed berries and toasted walnuts. .To toast the walnuts: toast them in a pan (without oil) for a couple of minutes until fragrant. Remove them from the pan and crush or chop them.
